For electives I had already taken, I filled in the actual course information, but for future electives I put them in as "Tech Elective."

I believe it is fine to deviate from the plan, as long as it doesn't affect your full-time status or completion date. They mainly want to know that you can indeed finish your course of study in the amount of time you claimed. It also let's them make sure you are basically on track as you go.

For the educational work plan do I have to fill out every single class? For the electives do I actually have to put the specific elective class name or can I just put something like "ECE Tech Elect*"?

If I do have to put specific classes are they set in stone or can I change my electives before I take them?
